Ingredients

  • 1 kg strawberries
  • 500 g gelatin sugar 2:1
  • 100 ml balsamic vinegar
  • 2 tbsp brown sugar
  • Vinegar

Instructions

  1. 1.

Wash, clean and cut the strawberries into pieces, then combine with the sugar in a pot. Mix well and let steep for about 20 minutes.

  2. 2.

Meanwhile, simmer the balsamic vinegar with the sugar while stirring until it becomes syrupy and caramelizes. Remove from heat.

  3. 3.

Boil jars for about 10 minutes in a large pot of hot water. Place rubber rings separately into boiling water with a splash of vinegar for 2–3 minutes. Remove jars and rings from water, turn them upside down on clean kitchen towels to cool.

  4. 4.

Bring the strawberries to a boil while stirring constantly. Cook bubbling for about 4 minutes. Stir in the balsamic vinegar, perform a gel test, and fill prepared jars with the jam. Seal immediately and let cool.
