Fig Jam with Lemon

Ingredients
- 1 kg fig
- 100 g dried soft date (pitted)
- 1 untreated lemon
- 50 g peeled pistachios (unsalted)
- 500 g gelatine sugar (3:1)
- 2 cm freshly grated ginger
- 250 ml dry red wine

Wash and quarter the figs. Cut the dates into large pieces. Wash the lemon hot, pat dry, grate some zest and squeeze out the juice. Combine the figs, dates, pistachios, sugar, ginger, lemon juice and zest with the red wine in a pot.

Bring to a boil while stirring occasionally and simmer for about 4 minutes until sparkling. Perform the gel test, then fill jars that have been rinsed hot, seal well and immediately place them upside down on a dish towel. Let stand for 5 minutes. Flip again and allow the fig jam with lemon to cool completely.
