Strawberry Jam Without Sugar
Strawberry jam without sugar from Spoonsparrow: sweetened with birch sugar and refined with real vanilla – it tastes like summer!
Ingredients
- 750 g strawberries
- 0.5 Vanilla bean
- 250 g birch sugar for gelling (3:1)
- 1 tbsp Lemon Juice

First, sterilize jars and lids by boiling them in a large pot of hot water for about 10 minutes. Remove the jars from the water and place them upside down on clean kitchen towels to cool.

Clean, wash, and cut strawberries into halves or quarters depending on size. Split the vanilla bean and scrape out the seeds. Combine strawberries, vanilla seeds, birch sugar, and lemon juice in a pot. Cook over medium heat while stirring for 4 minutes until it bubbles.

Pour the hot mixture into the prepared jars as hot as possible, seal immediately, invert them, and let cool. The jam stays sealed for about a year; after opening, consume within a few days.
