Stir‑Fried Pak Choi

Stir‑fried pak choi with sweet and spicy sauce: This low‑calorie side dish is packed with folate—more than half of the daily requirement.

Ingredients

  • 600 g baby pak choi (10 small heads)
  • 1 red chili pepper
  • 0.5 lemon
  • 2 tbsp Thai fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp Maple Syrup
  • 1 tbsp oil

Instructions

  1. 1.

    Clean the pak choi, removing outer leaves and trimming stem ends. Wash and dry.

  2. 2.

    Halve the chili lengthwise, deseed, wash and finely chop. Squeeze 1 Tbsp lemon juice from the lemon.

  3. 3.

    Whisk fish sauce, soy sauce, maple syrup, lemon juice and 2 Tbsp water together.

  4. 4.

    Heat oil in a pan or wok over high heat. Stir‑fry pak choi for 2 minutes, stirring constantly.

    Add chili and stir briefly.

  6. 6.

    Deglaze with the sauce, reduce heat and cover to cook for another minute. Serve immediately.
