Ingredients

  • 250 g flour
  • 75 g sugar
  • 1 pinch salt
  • 0.5 tsp lemon zest
  • 1 egg
  • 150 g softened butter
  • flour (for the work surface)
  • 150 g apricot jam
  • powdered sugar (for dusting)

Instructions

    Mix the flour with the sugar, salt and lemon zest; sift onto a work surface, create a well in the center, crack the egg into it and scatter the butter pieces around the well. Using a large knife, roughly chop all ingredients and quickly knead them by hand into a smooth dough. Shape into a ball and refrigerate for 30 minutes.

    Preheat the oven to 180°C (350°F) with upper and lower heat. Roll out the dough on a floured surface to a thickness of 0.4 cm and cut circles with a round cutter (3 cm diameter). From half of the cookies, use various cutters to cut numbers or letters in the center. Place the cookies on a baking sheet lined with parchment paper and bake in the preheated oven for about 12 minutes until golden yellow.

    Heat the apricot jam in a small pot until it becomes liquid, then strain through a sieve. Spread the jam over all the cookies, place the pierced ones on top, press lightly, and allow the jam to dry. Just before serving, dust the cookies with powdered sugar.
