Quince Jam Stars

Ingredients
- 150 g flour
- 150 g Ground Almonds
- 1 packet vanilla sugar
- 80 g sugar
- 1 tsp lemon zest
- a pinch of salt
- 1 egg
- 200 g butter
- flour (for the work surface)
- powdered sugar (for dusting)
- 150 g quince jam

Mix the flour with the almonds, vanilla sugar, sugar, lemon zest and a pinch of salt; sift onto the work surface. Create a well in the center, crack the egg into it, and distribute butter chunks around the well. Quickly knead by hand into a smooth dough, shape into a ball, wrap in cling film, and refrigerate for 30 minutes.

Preheat the oven to 180°C (350°F) with upper and lower heat.

Roll out the dough on a floured surface to about 1 cm thickness; cut out star shapes roughly 5 cm across. Poke a small 0.5 cm deep indentation in each star’s center, place them on parchment-lined baking sheet. Bake for about 12 minutes in the preheated oven, remove, lift with parchment and let cool. Dust stars with powdered sugar, fill with warm quince jam, and allow to dry.
