Jam-Filled Cookies

Ingredients
- 55 g soft butter
- 55 g unhydrogenated vegetable shortening (or hydrogenated vegetable shortening)
- 55 g brown sugar
- 1 egg yolk
- vanilla aroma
- 120 g flour
- a pinch of salt
- 1 Egg white
- 120 g chopped nuts (e.g., hazelnuts)
- 5 tbsp jam (e.g., currant)

Preheat the oven to 180°C fan-forced.

Cream the butter with the shortening, sugar, egg yolk and vanilla aroma using a hand mixer. Sprinkle the flour and salt over the mixture and combine with a dough scraper into a smooth, well-formed dough. Knead briefly on the work surface again and use a spoon to take small, even portions. Form these into balls and sequentially dip them in the egg white and roll them in nuts. Place on a prepared baking tray (lined with parchment paper or greased) and press a shallow depression in the center of each ball with a cooking spoon handle or thumb. Bake in the oven for about 10 minutes until golden brown.

Remove and fill the depressions with jam (smoothly stirred or lightly heated if desired) and allow to cool.
