Spit Roasted Piglet

Ingredients
- 1 kg piglet shoulder (cut into 0.5 kg pieces)
- 1 sprig rosemary
- 1 sprig thyme
- 1 tsp Dijon mustard
- 1 tsp Honey
- 4 tbsp oil
- Salt
- ground pepper
- kitchen twine
Instructions

Step 1: Place the meat with the fat side in hot water for about 30 minutes to soften the skin. Then cut a diamond pattern into it with a knife and lightly flatten the flesh side.

Step 2: Season with salt and pepper, brush with chopped rosemary, mustard, and slightly warmed honey.

Roll up and bind with kitchen twine.

Step 3: Tie tightly, season again with salt and pepper, and sear all sides in hot oil.

Bake at 180°C (350°F) under and over heat for about 20-25 minutes. Remove, let cool slightly, wrap firmly in plastic wrap, then aluminum foil.

Cool and serve cold sliced with a vinaigrette.
