Ingredients

  • 4 pork cutlets (about 180 g each)
  • 5 tbsp olive oil
  • 1 splash Lemon juice
  • 1 tbsp spice mix (equal parts curry powder, paprika, coriander)
  • 1 tsp chopped thyme
  • Salt
  • Pepper (freshly ground)
  • 12 slices baguette
  • 2 Garlic cloves
  • 2 Tomatoes
  • 6 tbsp Olive oil

Instructions

    Wash the cutlets, pat dry, lightly pound flat and slice into strips about 2 cm wide. Thread onto wooden skewers and arrange side by side in a shallow dish. For the marinade whisk together olive oil, lemon juice, spice mix and thyme; season with pepper. Drizzle the seasoned oil over the meat and cover for about 2 hours in the refrigerator. Remove from the marinade, salt lightly, and sear in a hot pan for 3–4 minutes, turning once.

    Toast the baguette slices. Peel and roughly chop the garlic. Boil the tomatoes briefly, cool, peel, quarter, deseed and dice finely. Mix with garlic and olive oil, season slightly, and spread over the toasted bread. Serve alongside the skewers.
