Ingredients
- 300 g lamb fillet
- 1 flesh tomato (deveined; seeded; finely chopped)
- 2 tbsp cold-pressed lemon olive oil
- 1 tsp chili oil
- Sea salt
- 0.5 tsp garam masala
- 1 pinch ginger (ground)
- 1 sprig mint
- 1 pinch ground chili peppers
- 1 small onion
- 1 small garlic clove
- 2 tbsp yogurt
- 1 spring onion (thin rings)
- romaine lettuce (for serving)
- 200 g olives (black and green, for serving)
- 8 lemon wedges (for serving)

Peel the garlic and onion and roughly chop; wash and dry the mint, shake off excess water, then chop. Mix all with spices. Cut the ice-cold meat into cubes, combine with the onion mixture and tomato pieces in a meat grinder, feed through the fine plate, mix in oil and yogurt, season to taste.

Divide for serving into 8 portions and shape into uniform nuggets. Arrange on lettuce, sprinkle with spring onions, and serve with olives and lemon wedges.
