Spit Roast Sandwich

Ingredients
- 150 g dried white beans
- 600 g spit roast roll meat
- salt
- pepper
- 1 tbsp freshly chopped rosemary
- 2 tbsp liquid honey
- chili flakes
- 1 splash Lemon juice
- 1 handful watercress
- 4 ciabatta rolls (optional with herbs)
Instructions

Soak the beans overnight covered in water.

Preheat oven to 200°C fan and top heat.

Rinse the spit roast, pat dry and season with salt and pepper. Place on a rack (fat drips onto pan below) and bake for about 1 hour.

Drain the beans and simmer again covered with water for about 45 minutes until soft.

Mix rosemary with honey and chili and brush the roast during the last 15 minutes of cooking.

Drain the beans and roughly mash with a fork. Season with salt, pepper and lemon juice.

Rinse the watercress and drain. Cut the rolls horizontally in half and spread beans on the bottom. Slice the roast into pieces and arrange on top. Sprinkle with watercress, place the roll tops back on and serve.
