Orange and Beef Sandwich

- 1 handful fresh spinach leaves
- 2 untreated oranges
- 200 g blue cheese (e.g., Gorgonzola)
- 2 tbsp crème fraîche
- Pepper (freshly ground)
- Salt
- 4 sandwich rolls
- 200 g roast beef (thin slices)

Preheat the oven to grill mode.

Wash and drain the spinach. Rinse the oranges hot, dry them, then zest half an orange with a zester. Cut off the top and bottom of both oranges, peel off as much white pith as possible with a sharp knife, and slice into thin rounds. Blend about half the blue cheese with crème fraîche, fold in the orange zest, season with pepper and optional salt.

Split the rolls open and grill for about 5 minutes until crisp. Remove and layer with roast beef. Spread some cheese cream on top, add spinach leaves, place 3-4 orange slices, sprinkle remaining blue cheese, grind a little more pepper over it, then close with the upper roll.
