Ingredients

  • 1 old-fashioned roll
  • 600 g mixed ground meat
  • 1 egg
  • 1 tsp medium-hot mustard
  • Salt
  • Pepper (freshly ground)
  • 30 g clarified butter
  • 4 sesame seed burger buns
  • 4 slices of Swiss cheese
  • 1 Red Onion
  • 4 slices goat cheese (roll)
  • 4 large salad leaves (e.g., iceberg, romaine, leaf lettuce)
  • 4 pickles (jarred)
  • 4 Tbsp mayonnaise
  • 1 tbsp Medium-hot mustard
  • a splash lemon juice

Instructions

    Soak the roll in lukewarm water. Mix the ground meat with the egg, mustard and the well-squeezed roll crumbs; season with salt and pepper. Shape eight flat patties from the mixture and fry them in a hot pan with clarified butter until golden brown on all sides. Meanwhile, cut the burger buns horizontally, place the cut side on a hot grill or griddle and lightly toast. Peel the onion and slice into thin rings.

    Wash, dry, and tear the salad leaves. Drain the pickles well and slice lengthwise into thin rounds. Whisk mayonnaise with mustard for the salad sauce; season with salt, pepper, and a splash of lemon juice. Top half of the patties with a slice of Swiss cheese and the other half with goat cheese. Let the cheese melt slightly and stack them.

    Remove the buns from the oven and place some salad leaves, salad sauce, pickles, and onion rings on the bottom bun. Stack the prepared patties on top. Tilt the top bun slightly onto the burger and serve with roasted potato and sweet‑potato wedges if desired.
