- 1 small carrot
- 1 stalk Celery
- 1 onion
- 2 Garlic cloves
- 4 tbsp olive oil
- 400 g mixed ground meat
- 2 tbsp Tomato paste
- 100 ml dry red wine
- 125 ml robust beef broth
- 1 red pepper
- Salt
- black pepper (freshly ground)

- 250 g passata (canned tomatoes)
- 400 g fusilli
- coarsely grated Emmental cheese (or Gouda)
- red pepper for garnish
- parsley for garnish

Peel and wash the carrot and celery, then finely dice both. Peel and finely chop the onion and garlic. Heat the oil, sauté the onions and garlic. Add the vegetables and cook briefly. Add the ground meat in portions, cooking it crumbly over high heat while stirring. Wash and finely chop the red pepper. Mix the pepper and tomato paste into the browned meat, then pour in the wine and beef broth. Season with salt, pepper, and paprika, then stir in the passata. Simmer for about an hour, stirring occasionally, adding more broth if needed.

Cook the fusilli in salted water until al dente.

Taste the sauce. Drain the pasta, mix it with the sauce, and serve on plates. Sprinkle cheese over the top as desired and garnish each serving with a slice of red pepper and a parsley leaf.
