Ingredients
- 1 Carrot
- 100 g Celery Root
- 1 onion
- 1 Garlic clove
- 400 g mixed ground beef
- 2 tbsp olive oil
- 2 tbsp Tomato paste
- 100 ml red wine
- 250 ml rich meat broth
- Salt
- a pinch sugar
- Pepper
- 400 g canned diced tomatoes
- 400 g spaghetti
- 20 g grated Parmesan cheese
- parsley (for garnish)

Peel the carrot, celery root, onion and garlic, then dice finely. Brown the ground beef in hot oil while stirring until crumbly. Add the prepared vegetables and sauté for another 2-3 minutes. Stir in tomato paste, deglaze with wine, and pour in meat broth. Season with salt, sugar and pepper, then stir in tomatoes. Simmer covered for about 40 minutes, stirring occasionally, adding more broth if needed.

Cook the spaghetti in salted water until al dente. Drain well. Taste the sauce again, mix it with the noodles, and serve on plates. Garnish with Parmesan and parsley as desired.
