Ingredients

  • 4 cod fillets (about 180 g)
  • Salt
  • pepper (ground)
  • juice of one lemon
  • 2 flour
  • 2 tbsp butter
  • 1 bunch Basil
  • 3 Garlic cloves
  • 2 tbsp coarse mustard
  • 8 tbsp olive oil
  • 2 tbsp lemon juice
  • a pinch sugar
  • Salt
  • pepper (ground)
  • Lemon slices (for garnish)

Instructions

    Clean cod fillets, drizzle with lemon juice and season with salt and pepper, then dust with flour. In a large pan heat butter and fry the fish on both sides for about 3 minutes until golden brown.

    Meanwhile wash basil, shake dry and pluck leaves. Peel garlic and roughly chop. Blend basil with garlic, oil and mustard finely. Season with lemon juice, sugar, salt and pepper. Plate fish fillets with the green sauce and garnish with lemon slices.
