Ingredients

  • 400 g spaghetti
  • 50 g mixed herbs (parsley, chives, basil, thyme,…)
  • 2 shallots
  • 1 Garlic clove
  • 1 tbsp pine nuts
  • 4 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp crumbled Pecorino

Instructions

    Cook the pasta in plenty of boiling salted water until al dente.

    Meanwhile wash and dry the herbs, then finely chop the leaves. Peel and dice the shallots and garlic.

    Toast the pine nuts in a dry pan until golden, then set aside. Heat the oil in the same pan and sauté the shallots and garlic until translucent; add the herbs, season with salt and pepper, and toss briefly in the pan. Drain the cooked pasta, let it drain, and immediately combine it in the pan with the herbs. Plate the herb spaghetti and sprinkle with Pecorino and pine nuts before serving.
