Spine Skewers with Swordfish and Vanilla

Ingredients
- 30 g fresh ginger
- 2 Vanilla Beans
- 70 ml rapeseed oil
- 450 g swordfish fillet (skinless, boneless)
- 3 red onions
- Salt
- 1 tbsp chopped dill
- pink peppercorns (for garnish)
- lemon slice (for garnish)
- 200 g Wild rice

On the day before, peel the ginger and grate finely on a fine side of a kitchen grater. Split the vanilla beans lengthwise and scrape out the seeds. Mix the vanilla and ginger with 50 ml rapeseed oil and let sit overnight.

The next day, rinse the fish and pat dry with paper towels. Peel the red onions, quarter them, and separate the layers. Cut the swordfish into equal cubes. Thread the fish cubes and onion pieces alternately onto wooden skewers and brush with the vanilla oil. Marinate for about 20 minutes.

Preheat a grill or grill pan and cook the skewers on all sides for a total of 5-7 minutes. Arrange on plates, sprinkle with chopped dill, and garnish with pink peppercorns and lemon slices. Serve with wild rice.
