Ingredients

  • 4 salmon steaks (≈200 g)
  • 1 bunch tarragon
  • 2 tsp lemon zest
  • lemons
  • oranges
  • 3 tbsp Soy sauce
  • pepper (ground)
  • 4 zucchini
  • 5 tbsp olive oil
  • 2 Garlic cloves
  • Salt
  • 4 tbsp mixed chopped herbs (parsley, chives, dill, tarragon, sorrel)

Instructions

    Rinse the salmon steaks cold and pat dry. Wash the tarragon, pat dry, and finely chop the leaves. Mix lemon and orange juice with lemon zest, tarragon, soy sauce, and pepper. Pour the mixture into a shallow dish. Turn the salmon steaks in it, cover, and refrigerate for about 30 minutes.

    Wash and trim the zucchini, then cut them lengthwise in half. Prick the cut surfaces several times with a fork and drizzle with 2 tbsp olive oil. Peel the garlic cloves, crush them, and spread on the zucchini cut surfaces with a knife. Sprinkle pepper, salt, and herbs over them.

    Remove the salmon steaks from the marinate and pat dry. Place the zucchini (optionally wrapped in foil) along the grill edge and grill for about 8 minutes.

    Place the salmon on the cooler side of the grill and briefly sear it. Meanwhile mix the remaining olive oil with the leftover marinade and brush the fish with it. Flip the salmon steaks and grill until the underside is golden brown, then flip again and quickly grill while brushing with more marinade.

    Season the fish with salt and serve alongside the grilled zucchini.
