Spinach with Cream

Ingredients

  • 600 g spinach leaves
  • 1 small onion
  • 2 EL Butter
  • 2 TL spelt whole‑grain flour
  • 200 ml milk (3.5 % fat)
  • 100 g Sour cream
  • Salt
  • Pepper
  • freshly grated nutmeg

Instructions

    Wash, trim and dry the spinach; roughly chop it. Peel the onion and dice into small cubes. Heat the butter in a pot, sauté the onion until translucent, then add the spinach. Cover with a lid and let it wilt over medium heat.

    Dust with flour, stir in the milk and bring to a boil once. Season with salt, pepper and nutmeg, then fold in the sour cream. Taste and serve.
