Farmers Salad

Ingredients

  • 100 g Red lentils
  • 250 ml clear broth (instant)
  • 1 cucumber
  • 1 vegetable onion
  • 500 g tomatoes
  • 1 bundle dandelion greens
  • 50 g black olives (pitted)
  • 200 g sheep cheese
  • 4 tbsp white wine vinegar
  • Salt
  • white pepper from the mill
  • 6 tbsp Olive oil

Instructions

    Cook lentils in broth for 3 minutes. Drain and let cool.

    Wash cucumber, halve lengthwise and roughly dice. Peel vegetable onion and cut into thin strips. Wash tomatoes and dice. Clean dandelion greens, wash and drain.

    Mix all prepared ingredients and olives. Slice sheep cheese and arrange on top.
