Gratinated Chicory

Ingredients

  • 500 g chicory (4 chicory stalks)
  • 2 stems basil
  • 1 sprig rosemary
  • 1 sprig thyme
  • 1 stem parsley
  • 80 g raclette cheese
  • 50 g sour cream
  • Salt
  • Pepper

Instructions

    Wash, trim and cut the chicory lengthwise in half.

    Wash the herbs, pat them dry and remove the leaves from the stems.

  3. 3.

    Blend the cheese with sour cream and the herbs in a blender until smooth; season with salt and pepper.

    Place the chicory halves cut side down on a baking sheet lined with parchment paper and spread the cheese mixture over each half. Bake in a preheated oven at 180 °C (fan 160 °C) for 20–30 minutes, or until golden brown.

    Serve the gratinated chicory.
