Ingredients

  • 250 g fresh spinach
  • Lollo Rosso
  • 150 g Corn (canned)
  • 4 small goat cream cheese balls
  • Salt
  • coarse pepper
  • 2 tbsp Red wine vinegar
  • 4 tbsp olive oil
  • 0.5 tsp mustard
  • Salt
  • Pepper

Instructions

    Wash the spinach thoroughly, wash Lollo Rosso and tear into small pieces. Drain the corn well. Arrange four salad bowls with spinach and Lollo Rosso.

    Place the corn in a heat‑proof dish, mix with crumbled goat cheese, and melt under the grill in the oven.

    Whisk a vinaigrette from the listed ingredients, drizzle over the salad, place a generous dollop of corn‑cheese mixture in the center of each bowl, and season with freshly ground pepper.
