Cold Melon Bowl with Shrimp

Ingredients
- 1 small white sugar melon
- 500 ml yogurt
- 100 g vegetable broth
- Salt
- Pepper
- 12 shrimp (peeled, deveined)
- 1 tbsp butter
- 1 slice cantaloupe melon
- 2 sprigs Mint

Halve the sugar melon and remove seeds. Peel and dice the flesh into cubes.

Add the diced flesh to a blender with yogurt and vegetable broth; blend until smooth.

Season with salt and pepper, then chill in the refrigerator for at least 1 hour.

Heat butter in a pan over low heat and gently sauté the cantaloupe balls extracted from the melon flesh.

Divide the chilled mixture among four bowls, drop the cantaloupe spheres into each, arrange shrimp on top, and sprinkle with chopped mint before serving.
