Spinach pesto from Spoonsparrow: Especially in spring, a culinary delight!

Ingredients

  • 100 g young spinach leaves
  • 50 g Parmesan cheese (block)
  • 3 Garlic cloves
  • 6 tbsp extra virgin olive oil
  • 50 g Pine nuts
  • a pinch of salt
  • 1 tbsp olives (for garnish)

Instructions

    Wash the spinach, rinse and pat dry. Grate the Parmesan. Peel and finely chop the garlic.

    Place spinach and Parmesan in a measuring cup. Add the olive oil, garlic, and pine nuts, then blend with an immersion blender. Season the spinach pesto with salt, pour into jars, and garnish with a black olive.
