Champignon Salad with Bell Pepper

Ingredients

  • 700 g fresh small mushrooms
  • 1 bay leaf
  • 2 tbsp lemon juice
  • 2 red bell peppers
  • 1 Garlic clove
  • 2 tbsp white balsamic vinegar
  • 3 tbsp olive oil
  • 0.5 tsp freshly chopped thyme
  • 0.5 tsp freshly chopped rosemary
  • Salt
  • Pepper (freshly ground)

Instructions

    Peel and clean the mushrooms. Simmer them in salted water with lemon juice and bay leaf for about 5 minutes. Wash, core, and chop the bell peppers into pieces. Drain the mushrooms and let them drain.

    Peel and finely mince the garlic clove. Mix the vinegar with olive oil, garlic, thyme, and rosemary. Place the mushrooms and bell pepper in a salad bowl and pour the dressing over them. Refrigerate for about 1 hour. Just before serving season with salt and pepper.
