Ingredients
- 2 mild red onions
- 2 carrots
- 1 small apple
- 1 lemon (juice)
- 2 tbsp olive oil
- 2 tbsp sesame oil
- Salt
- a pinch nutmeg
- a pinch cumin
- 1 handful baby spinach
Instructions

Peel the onions and slice them into thin strips. Peel the carrots and julienne them into fine strips. Wash the apple, quarter it, remove the core, and also julienne it into fine strips. Combine the apple with lemon juice in a large bowl. Mix in the carrots and onions.

Add the two oils, salt, nutmeg, and cumin, then stir to combine. Let sit for about 30 minutes. Wash the spinach, dry it thoroughly, and slice into thin strips. Add to the carrot salad with onion, taste, and serve.
