Spinach Pasta Dough Without Egg
Try this vegan spinach pasta dough without egg from Spoonsparrow. It is a great weekend dinner.
Ingredients
- 2 handfuls young spinach
- Salt
- 2 tbsp olive oil
- 400 g spelt flour (Type 630)

Clean, wash, dry and shake off excess water from the spinach. Blanch in boiling water for 2 minutes, then shock with cold water and drain. Squeeze out excess moisture, then puree with olive oil and 200 ml water using a hand blender until smooth.

Sift spelt flour onto a work surface and create a well in the center. Pour the spinach cream into the well, season with a pinch of salt, and gradually fold in the flour from the edges with your fingers until incorporated. Knead the dough thoroughly until it becomes supple and smooth; adjust flour quantity slightly if needed.

Cover the dough and let it rest for at least 30 minutes before rolling or shaping into desired pasta varieties.
