Ingredients

  • 4 dried tomatoes (pickled in oil)
  • 1 large onion
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 2 tbsp Tomato paste
  • 800 g peeled canned tomatoes
  • Salt
  • Pepper (freshly ground)
  • 1 tsp dried thyme
  • 1 tsp Dried oregano
  • chili flakes
  • 500 g spaghetti
  • a handful fresh basil
  • sugar
  • 40 g grated Parmesan

Instructions

    Drain the dried tomatoes and roughly chop them. Peel and finely dice the onion and garlic. Sauté both in hot olive oil. Add tomato paste briefly, then add canned tomatoes and dried tomatoes. Stir well and break up with a spoon. Season with salt and pepper, simmer gently for about 20 minutes, stirring occasionally. Then refine with herbs and chili, cooking another 5-10 minutes until desired consistency.

    Cook the spaghetti in salted water al dente. Wash, dry, and shake basil leaves; fold them into the sauce. Taste with salt, pepper, and a pinch of sugar. Toss with drained pasta. Plate and sprinkle with Parmesan before serving.
