Ingredients

  • 5 ripe tomatoes
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 65 g walnut kernels
  • 400 g crushed tomatoes (canned)
  • Salt
  • Pepper (freshly ground)
  • 400 g Whole Wheat Spaghetti
  • a handful fresh basil
  • sugar

Instructions

    Wash the tomatoes, remove stems and dice them. Peel and finely dice the onion and garlic. Heat the oil and sauté both until translucent. Roughly chop the walnut kernels and add them to the pan. Add the diced tomatoes, pour in the crushed tomatoes, season with salt and pepper, and simmer for about 10 minutes. Meanwhile, cook the pasta in plenty of boiling salted water until al dente.

    Wash the basil, shake dry, pluck the leaves and cut into strips. Fold half the basil into the sauce and adjust seasoning with additional salt, pepper, and a pinch of sugar. Drain the pasta, let it drain briefly, then toss with the sauce. Plate and garnish with remaining basil before serving.
