Ingredients

  • 8 slices sandwich bread (alternatively toast bread)
  • 300 g fresh spinach
  • 150 g Taleggio cheese
  • Salt
  • Pepper (freshly ground)
  • olive oil

Instructions

    Wash the spinach and blanch in boiling salted water for 2 minutes. Drain well. Chop the spinach on a cutting board and mix with a little olive oil, salt, and pepper.

    Cut the Taleggio into small pieces. Drizzle a bit of oil onto the inner sides of the sandwich bread. Place the spinach on one slice and top with the Taleggio. Cover with the second slice of bread and press firmly together. Repeat for all four sandwiches. Roast the sandwiches under a hot oven grill until golden brown on both sides, or use a sandwich toaster if available.
