Ingredients

  • 3 chicken breast fillets (about 160 g each)
  • 60 g tandoori paste (Asian grocery store)
  • 1 mango (about 450 g)
  • 200 g cucumber salad
  • 75 g frisée lettuce
  • 12 slices sandwich bread
  • 60 g soft butter
  • 200 g mango chutney (jar)

Instructions

    Brush chicken breast fillets all over with the tandoori paste. Place on a baking sheet lined with parchment paper and bake in a preheated oven at 200°C on the second rack from the bottom for 12 minutes. Remove and let cool, then slice thinly.

    Peel mango and cucumber, slice both thinly. Wash frisée, trim, and tear into small pieces. Spread butter on half of the bread slices, layer with frisée, cucumber, chicken, and mango. Spread mango chutney on the remaining bread slices and place them on top. Wrap sandwiches tightly in cling film and let chill for 2 hours. Slice diagonally before serving.
