Cauliflower with Walnut Sauce (Turkey)

Ingredients
- 1 large cauliflower
- 1 lemon (juiced)
- 100 g walnut kernels
- 3 slices sandwich bread
- 2 tbsp plant oil
- 2 tbsp walnut oil
- 1 Garlic clove
- Salt
- white pepper

Wash the cauliflower, cut into florets and bring to a boil in plenty of salted water with the juice of 1 lemon. Cover and cook for about 10-15 minutes until al dente, then drain well and keep warm at 80°C.

Soak the bread slices in lukewarm water, lightly squeeze out excess liquid, crumble finely and mix with both oils and remaining lemon juice. Roughly chop walnuts and toast them lightly in a dry pan. Add the crumbled bread mixture to the toasted walnuts, press in the garlic, season with salt and pepper, adding a little warm water if needed to thicken the sauce.

Arrange the cauliflower on four plates, pour the walnut sauce over it, garnish with parsley and sprinkle with pepper before serving.
