Spicy Potatoes with Coriander and Cumin

Ingredients

  • 800 g potatoes
  • Salt
  • 6 tbsp Olive oil
  • 1 tsp cumin seeds
  • 4 tsp chopped fresh ginger
  • ½ tsp cayenne pepper
  • 3 tbsp fresh coriander (finely chopped)
  • black pepper (ground)

Instructions

    Cook potatoes in salted water for 25 minutes until tender. Drain, let cool, peel and cut into 2 cm cubes.

    Heat oil in a non‑stick pan over medium heat. Add whole cumin seeds and fry for 5 minutes until fragrant. Add potatoes, ginger, ground cumin, salt, cayenne pepper, and black pepper; season to taste. Fry for an additional 3–5 minutes while stirring or turning. Remove from heat, stir in fresh coriander, and serve immediately.
