Stuffed Potatoes with Egg

Ingredients
- 4 large potatoes
- soft butter (for baking pan)
- 100 g goat fresh cheese
- 4 eggs
- Salt
- pepper (from grinder)
- mint (for garnish)
Instructions

Wash the potatoes and steam them for about 30 minutes.

Preheat the oven to 180°C fan. Grease a baking dish.

Let the potatoes cool slightly, cut off the bottom for stability and also trim a lid. Hollow out the potatoes leaving about a 1 cm thick rim. Crumble the cheese inside. Crack the eggs and gently slide them into the cavities. Season with salt and pepper, place in the dish and bake for about 10 minutes until set.

Serve the stuffed potatoes with egg garnished with mint as desired.
