Half Baked Potatoes with Cheese and Spring Onions
Half potatoes baked with cheese and spring onions from Spoonsparrow taste not only for dinner!
Ingredients
- 500 g smaller new potatoes
- Salt
- 0.5 bunch spring onions
- 1 tbsp Sunflower oil
- pepper (ground)
- 75 g cheddar (grated)
- 2 tbsp butter
Instructions

Wash the potatoes and, if needed, scrub them thoroughly. Boil in salted water for about 15–20 minutes until cooked. Drain and let cool.

Wash and trim the spring onions, then slice into thin rings. Heat 1 tbsp butter in a pan and cook the onions over low heat for about 5 minutes. Season with salt and pepper and allow to cool slightly.

Halve the potatoes and use a small spoon to hollow out a bit of each half. Fill with the cooked onions and sprinkle with cheddar cheese.

Arrange the potato halves side by side in a greased baking dish. Dot the remaining butter over the tops. Bake in a preheated oven at 200 °C (middle rack) for about 10 minutes until golden.
