Spicy Namibian Beef Casserole

Ingredients

  • 1 loaf roll
  • 250 ml milk
  • 1 kg beef (coarsely chopped)
  • 1 onion (peeled and chopped)
  • 1 garlic clove (chopped)
  • 100 g sultanas
  • 100 g whole almonds
  • 1 tbsp apricot jam
  • 2 tbsp mango chutney
  • 25 ml lemon juice
  • 1 tbsp curry powder
  • 1 tbsp cardamom
  • Salt
  • pepper (ground)
  • 2 tbsp olive oil
  • 2 Eggs
  • 2 Bay leaves
  • 0.5 Mango
  • 1 Banana

Instructions

    Soak the loaf in half the milk, then squeeze out excess and add to the ground beef.

    Heat the oil in a pan and sauté onion with garlic. Add the meat mixture and cook slowly for about 10 minutes until crumbly, stirring frequently. Stir in curry, then mix in sultanas, almonds, apricot jam, chutney, lemon juice, and cardamom. Remove from heat and season with salt and pepper. Transfer the mixture to a baking dish (or 4-6 smaller dishes). Peel the mango and cut into wedges; peel the banana and slice diagonally into thick rounds. Place both on top of the casserole and press lightly in.

    Whisk the eggs with the remaining milk and pour over the meat, lay bay leaves on top, and bake in a preheated oven at 180°C (O/B) for about 25-30 minutes until golden brown.
