Stuffed White Bread with South African Curry

Ingredients
- 400 g firm potatoes
- Salt
- 2 onions
- 4 Garlic cloves
- 6 sprigs coriander leaves
- 2 tbsp clarified butter
- 400 g minced beef
- 2 star anise
- 1 tsp fennel seeds
- 1 tsp cumin seeds
- 2 Cinnamon sticks
- 2 tsp Turmeric powder
- 2 tsp coriander powder
- 2 pinch cayenne pepper
- 2 pinch garam masala
- 2 tbsp Tomato paste
- 300 ml beef broth
- 2 small white loaves

Wash the potatoes and boil as whole potatoes in salted water for about 25 minutes. Drain and let cool slightly. Meanwhile peel onions and garlic, slice into strips. Wash coriander, shake dry and finely chop leaves.

Heat clarified butter in a pot, brown minced beef until crumbly and lightly browned. Add all spices and toast while stirring. Stir in tomato paste and deglaze with broth. Cover and simmer over medium heat for about 15 minutes to make a meat curry, stirring occasionally.

During this time peel the potatoes and dice them. Halve the white loaves and hollow out the centers. Mix diced potatoes with the beef curry, season with salt, and fill the loaves. Sprinkle with fresh coriander.
