Spicy Green Vegetable Curry

Enjoy it a bit spicier? This spicy green vegetable curry from Spoonsparrow heats up nicely and is easy to prepare.

Ingredients

  • 1 stalk leek
  • 500 g green sugar snap peas
  • 500 g broccoli florets
  • 2 Zucchini
  • 1 Garlic clove
  • 2 cm fresh ginger
  • 1 tbsp plant oil
  • 1 tbsp finely ground peanut butter
  • 3 tbsp hot yellow curry paste
  • 200 ml coconut milk
  • 400 ml Vegetable broth
  • coriander (ground)
  • Salt
  • Pepper
  • 2 tbsp chopped peanuts

Instructions

    Wash, trim and slice the leek into rings. Wash and trim the sugar snap peas. Rinse the broccoli florets and drain. Wash, trim and cut the zucchini into pieces. Peel and finely chop the garlic and ginger. Briefly sauté all together in hot oil. Add the leek, broccoli, zucchini and snap peas and cook for 1-2 minutes. Stir in peanut butter and curry paste, cook briefly, then deglaze with coconut milk and broth. Simmer for about 5 minutes. Season with coriander, salt and pepper.
