Ingredients
- 2 green zucchini
- 1 yellow zucchini
- 100 g mushrooms
- 2 medium eggplants
- 1 large red onion
- 0.5 red bell pepper
- 0.5 green bell pepper
- 0.5 yellow bell pepper
- Salt
- Pepper (freshly ground)
- extra virgin olive oil
- 2 cloves garlic (finely chopped)
- 2 tbsp lemon juice

Wash the zucchini and slice them. Wash the eggplants, slice them, and place in cold salted water. Remove the eggplants from the water and pat dry with kitchen paper. Clean the mushrooms. Peel the onion and slice it. Mix about 200 ml olive oil with the garlic and brush all vegetables with this mixture. Season with salt and pepper.

Grill the vegetables on a charcoal grill for a total of about 10-15 minutes, turning and brushing with oil frequently. Arrange the mixed grilled vegetables on a platter, drizzle with lemon juice, and serve.
