Simple Grilled Vegetables

Ingredients

  • 1 Garlic clove
  • 2 Zucchini
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 2 thin eggplants
  • 1 bulb fennel
  • Salt
  • Pepper
  • oil
  • 1 tbsp garden herbs (chopped)

Instructions

    Wash the zucchinis and slice them. Wash the bell peppers, trim, halve, seed, remove the inner skins and cut into wide strips. Slice the eggplants, salt the slices and let sit for about 10 minutes, then rinse under water, pat dry and drizzle with oil.

    Trim the fennel bulb, cut back the greens and slice into wedges. Lightly season the vegetables with salt and pepper and drizzle with oil. Grill over high heat, turning occasionally, for about 10 minutes until cooked through. Mince the garlic and mix with 2 tbsp oil and the herbs. Place the grilled vegetables in a serving bowl, toss with the garlic mixture and serve warm or cold.
