Spicy Chicken Salad with Mango

Ingredients
- 1 cold grilled chicken
- 1 Mango
- 1 chili pepper
- 1 cucumber
- 100 g thin rice noodles
- 0.5 head of iceberg lettuce
- 1 tbsp honey
- 2 tbsp lemon juice
- 0.5 orange (juice)
- 0.5 tsp fresh grated ginger
- Salt
- Cayenne pepper
Instructions

Pull the chicken apart, remove the skin and shred the meat into small pieces.

Peel the mango, remove the pit and slice it thinly.

Wash the chili pepper, cut it in half lengthwise, deseed and finely chop it.

Wash the cucumber, quarter it lengthwise and slice it thinly.

Cook the rice noodles according to package instructions until al dente, rinse with cold water and drain.

Wash the iceberg lettuce, trim it and tear into bite‑sized pieces as desired. Arrange on a large plate or four small bowls.

Combine honey, ginger, lemon juice and orange juice in a bowl. Add mango, chili, cucumber and noodles; season with salt and cayenne pepper. Let sit for about 20 minutes to meld flavors, taste, then serve atop the lettuce bed.
