Ingredients
- 500 g fresh young spinach
- 265 g cooked chickpeas (1 can)
- 1 ripe Avocado
- 2 beef tomatoes
- 8 plum plums
- Salt
- Pepper (freshly ground)
- 3 spring onions
- 4 tbsp olive oil
- 1 tsp mustard (medium sharp)
- a pinch of sugar
- sugar
- 2 tbsp Apple cider vinegar
Instructions

Wash, rinse, and dry spinach.

Drain chickpeas.

Peel avocado, halve it, remove the pit, and cube.

Wash tomatoes, halve them, remove seeds and stems, and dice small.

Wash plums, halve them, remove pits, and cut into wedges.

Wash spring onions and finely chop.

Whisk olive oil, mustard, sugar, and apple cider vinegar. Season with salt, pepper, and a touch of sugar.

In a large bowl combine spinach, chickpeas, tomatoes, avocado, and plums. Divide onto four plates and drizzle with the vinaigrette before serving.
