Ingredients

  • 200 g thick white beans (dried)
  • 0.5 spring onions
  • 4 tomatoes
  • 40 g black olives (pitted)
  • 0.5 handful parsley
  • 0.5 handful dill
  • 0.5 handful mint
  • 50 ml white balsamic vinegar
  • Salt
  • ground pepper
  • 1 pinch ground cumin
  • 50 ml olive oil

Instructions

    Soak the beans overnight in plenty of cold, unsalted water. The next day drain them and cook in fresh water for about 45 minutes until they still have a slight bite. Drain and let cool.

    Wash, trim, and slice the spring onions diagonally into thin slices. Wash the tomatoes, quarter them, remove seeds, and dice finely. Slice the olives into strips. Rinse the herbs, shake dry, and chop finely.

    Combine the beans, spring onion slices, tomato cubes, olive strips, and herbs. Whisk together vinegar with salt, pepper, and cumin. Fold in the olive oil, taste, and mix into the salad. Let it rest for about 30 minutes before serving.
