Ingredients

  • soft butter (for the pan)
  • 250 g sunflower bread
  • 80 g Butter
  • 400 g ricotta
  • 4 eggs
  • 100 ml whipping cream
  • 150 g grated cheese (e.g., Pecorino)
  • 60 g capers
  • 1 handful basil
  • 200 g Sour Cream

Instructions

    Preheat the oven to 200°C fan. Butter the baking pan.

    Finely chop the bread in a food processor and put it in a bowl. Melt the butter and mix into the bread. Fill the pan and press evenly onto the bottom.

    For the cheese filling, drain the ricotta well and place it in a bowl. Separate the eggs; whisk the yolks with cream and cheese into the ricotta. Drain the capers, set aside some for garnish, chop the rest and fold into the mixture. Season with salt and pepper. Whisk the egg whites until stiff and fold them in. Spread over the bread base and smooth. Bake in the oven about 40 minutes until golden brown. Remove and cool.

    For garnish, rinse the basil, shake dry, pick off leaves and cut into fine strips. Mix into the sour cream.

    Cut the cake into small bites and place on plates. Add a dollop of sour cream to each and garnish with remaining capers. Serve.
