Ingredients

  • 0.5 Vanilla bean
  • 105 ml neutral plant oil
  • 0.5 tsp turmeric powder
  • 0.5 organic lemon (juice and zest)
  • 200 g unsweetened applesauce
  • 80 g coconut palm sugar
  • 150 ml milk
  • 4 eggs
  • 360 g spelt whole‑grain flour
  • 50 g starch
  • 10 g baking powder (1 tbsp)
  • 3 tbsp cocoa powder (45 g, strongly defatted)
  • 4 tbsp sparkling mineral water

Instructions

    For the batter split the vanilla bean lengthwise and scrape out the seeds. Whisk 100 ml oil with vanilla seeds, turmeric, lemon juice and zest, applesauce and coconut palm sugar. Gradually stir in milk and eggs. Sift 350 g flour with starch and baking powder, mix well and fold into the wet mixture quickly.

    Take about one‑third of the batter and whisk cocoa powder with sparkling water.

    If needed, grease a bundt pan with remaining oil and dust it with leftover flour.

    Pour the light batter into the pan. Add the dark batter on top. Using a fork, swirl chocolate batter in circular motions. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 60 minutes (test with a skewer). Transfer the marble cake to a cooling rack and let it cool for 10 minutes.
