Spicy Cheese Biscuit
Spicy biscuit with cheese from Spoonsparrow: A little nibble is always welcome!
Ingredients
- 175 g Parmesan (1 piece)
- 300 g spelt whole‑grain flour
- 1 tsp Baking powder
- 1 tsp paprika powder
- 2 tbsp heavy cream
- 200 g cold butter
- 2 egg yolks
- 1 tbsp chopped pistachio nuts
- 1 tsp coarse sea salt
- 1 tbsp caraway seeds
- 1 tbsp poppy seeds
- 1 tbsp Sesame seeds

Grate the cheese finely. Mix flour, baking powder and paprika; press a well in the center and pour in the cream. Place small butter lumps on the edge, sprinkle cheese over them, and knead quickly into a smooth shortcrust dough. Cover and chill for about an hour.

Divide the dough into three pieces and roll each to about 3 mm thickness. Cut out biscuits with a cookie cutter.

Whisk egg yolks with 2–3 tbsp water and brush the biscuits. Sprinkle with chopped pistachios, coarse salt, caraway, poppy or sesame seeds as desired.

Line a baking sheet with parchment paper and bake the spicy biscuits in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 10 minutes until golden. Repeat with the remaining dough until all is used.
