Ingredients

  • 500 g waxy blue potatoes (e.g., "Vitelotte")
  • 1 l deep-frying oil
  • Salt

    Wash and dry the purple potatoes thoroughly. Slice them thinly with a mandoline, spread the slices side by side on kitchen paper, pat off excess starch with another piece of kitchen paper, and lightly season with salt.

    Heat the frying fat in a pot (it is hot enough when bubbles rise from the handle of a cooking spoon). Fry the potato slices in batches for 2–3 minutes each, drain them on kitchen paper, let them cool, then serve in small bowls.
