Ingredients

  • 1 ripe Avocado
  • 2 tbsp lemon juice
  • 2 cloves garlic
  • 2 tbsp parsley
  • 200 g fresh mayonnaise
  • Salt
  • black pepper (freshly ground)
  • 250 g Potatoes
  • vegetable oil (for frying)

Instructions

    Cut the avocado in half, remove the pit, scoop out the flesh and mash with a fork. Mix in the lemon juice. Peel the garlic cloves and press them through a garlic press. Wash and finely chop the parsley. Combine the mayonnaise with the mashed avocado, garlic, and parsley; season with salt and pepper and refrigerate until ready to serve.

    Wash, peel, and slice the potatoes into thin strips. Pat dry. Heat plenty of vegetable oil in a pot to 160 °C. Fry the potato slices in batches until golden‑brown and crisp. Remove with a slotted spoon and drain on paper towels. Serve together with the dip.
