Spiced Brown Rice
A flavorful oven-baked brown rice that is especially valuable when using unpolished natural rice. It becomes truly delicious with star anise and cinnamon.
Ingredients
- 300 ml classic vegetable stock
- 2 cardamom pods
- 4 white peppercorns
- 1 star anise
- 1 onion
- 1 Garlic clove
- 1 tbsp Olive Oil
- 1 cinnamon stick
- 125 g whole grain brown rice

Bring the stock to a boil and keep warm. Roughly crush the cardamom and pepper in a mortar, and break the star anise into pieces.

Peel the onion and garlic. Dice the onion finely and press the garlic through a press.

Heat the oil in a pot. Add the crushed spices and cinnamon stick, sautéing for 1 minute while stirring. Add onions and garlic, cooking for 30 seconds. Add the rice and sauté for another 30 seconds.

Pour the hot stock over the rice, stir, cover, and bake in a preheated oven at 180 °C (160 °C fan) on the lower rack for 35–40 minutes. If liquid remains after baking, continue cooking the rice in the oven for an additional 4–5 minutes.
